- Herbs such as Cinchona (quinine bark) and rhubarb lightly colour the clear wine base brown
- Sugar, browned on the fire, is added to emphasize the amber tone and add the distinctive taste of cotton candy to round off all the bitter tastes without using vanilla
- Artemisia (wormwood) and citrus dominate with their balanced bitter and citrusy notes which characterize Cocchi style.
